Salsa Tuna Salad

  • 2–3 Tbsp. organic salsa (Whole Foods’ 365 brand has a great flavor)
  • 1 Tbsp. light or reduced fat sour cream
  • ½ fresh lime juice
  • ½ cup fresh diced or canned tomatoes
  • ¼ cup fresh or frozen corn
  • ¼ cup black or kidney beans
  • A few black olives
  • 2.5–3 oz. fresh/canned tuna in water (tuna pouches work great, too)
  • 2 Tbsp. shredded reduced-fat cheese (Cabot cheddar jalapeño is very tasty)
  • 2 cups cut greens (your preference – I use Red Leaf/Spinach mix)
  • Small amount of sunflower seeds or baked corn tortilla strips

Mix the salsa, lime juice and sour cream. Place in bottom of jar. Layer the jar in the order of the recipe. Close lid tightly and refrigerate. When ready, dump ingredients from jar into bowl or give a shake for a few seconds and enjoy.
