Ingredients:
1 head of romaine – cleaned and cut in 4 lengthwise
1 tbsp. olive oil
1 cup fresh local sliced strawberries
Dressing:
¼ cup dark chocolate
¼ cup olive oil
2 tsp. local honey
Salt and pepper to taste
¼ cup balsamic vinegar
Methodology:
Preheat grill or grill pan. Spread a light amount of oil on romaine and grill cut side down for 1-2 minutes. Remove from heat – place on platter with a little salt and pepper. Melt chocolate and balsamic in small sauce pan on low heat until smooth. Remove from heat and whisk in oil, honey and pepper.
Place ¼ cup sliced strawberries on top of romaine – drizzle with sauce.
